Recipe Lemon chicken-
8 organic chicken thighs
2 lemons, sliced seeds removed
3 cloves garlic crushed
2 tbs olive oil 1/4 cup olive oil
8 Roma tomatoes cut in wedges
1/2 cup chopped or sliced olives or capers
6-8 fingerling potatoes, quartered
3 large carrots, cut in large slices
2 tsp rosemary
salt and pepper
Preheat oven to 450
Coat a large oven-proof skillet (cast iron works great) with the 2 tbs of olive oil and layer bottom with lemon slices.
On top of lemon place layer of chicken.
Mix the rest of the ingredients together (veggies, oil and spices) and opour over to cover chicken.
Place in oven and cook for one hour.
Optionally, remove veggies and return pan to oven so that the chicken can brown.
Serve with a salad for a great meal.
