Flax Seed Chocolate Chip Bars

I developed this recipe for a gluten free treat that can satisfy a “sweet” craving without spiking blood sugar and insulin levels. The fiber content is high which can help make you feel full longer too. I recommend consuming a glass of water before or after enjoying your bar.

Makes 16 bars

Ingredients:

½ cup walnuts
½ cup pecans
4 TBS whole flax seeds
4 TBS ground golden flax meal
4 TBS unsweetened shredded coconut
2 TBS coconut flakes
2TBS cinnamon applesauce
¼ cup honey (or 2TBS honey and a dash of stevia)
2 TBS coconut oil
1 tsp vanilla extract
½ tsp kosher salt
6 TBS mini chocolate chips

In a food processor pulse the walnuts and pecans until evenly chopped.
Melt the coconut oil and honey on low heat stirring to blend.
Add oil mixture to the nuts. Add the rest of the ingredients and pulse until well combined. Use a spatula to spread into a baking dish (9×9 works well).
Bake at 350 for 15 minutes.
Cool before serving.

Note:
This can be cooked on a lower heat- 300 for 20 min.
For a raw version form the dough into balls and roll in shredded coconut.
Bars are really good frozen
